SPEEDWAY — The Newly opened “Barbecue and Bourbon on Main” here offers locals the opportunity to get Memphis-style cooking in the middle of racing country.
Barbecue and Bourbon, at 1414 Main St., is owned by business partners David Huff and Marcia Sommers. It’s open from 11 a.m. to 12 a.m. Monday through Saturday.
Huff, who has owned his own catering business — Bud’s Smokin’ BBQ — for about 10 years, said he’s cooking everything the right way.
“Everything is slow cooked on the (outdoor) smoker, except for whatever is fried,” Huff said. “Everything is pretty much homemade — everything from scratch.”
Huff, who is from the Decatur area, said his barbecue is made “Memphis-style,” which means it’s cooked with only a rub, no sauce. Huff said he feels that if barbecue is done right, there’s no need to hide behind sauce. He does have his own sauce for the table, which comes in mild, medium, and hot.
While Huff’s specialties are pulled pork and brisket, the menu is littered with other items like burgers, tenderloin, fish sandwich, soups, salads, several sides, appetizers, and more.
Huff said he’s planning on having specials almost every night and weekend entertainment.
“We’re going to have all-you-can-eat catfish on Fridays and Wings and Whiskey Wednesdays,” he said. “(There will be) live music on Saturday and we’re going to kind of do a jam session on Fridays, where it’s an open mic jam. We’re setting everything up (inside).”
On Fridays and Saturdays, Huff said he’ll be serving up specials that aren’t on the menu, like a smoked salmon or smoked prime rib, for example.
Barbecue and Bourbon also features a bar with many varieties of bourbon, some of which are from local distilleries, as well as local beers.
